Study Finds Many Americans Struggle to Eat Healthy at Work

Healthy LunchIf you find yourself reaching for a greasy fast-food hamburger or slice of pizza on your lunch break, you’re not alone. According to a recent survey published by the American Heart Association in cooperation with the food services company Aramark, more than half (56 percent) of American workers struggle to make healthy lunch choices at work.

The survey also suggests that your lunch choices on the clock have an impact beyond your time at work.

More than three-quarters (77%) of respondents said that they’re more likely to make healthy decisions throughout the day if they eat a nutritious lunch in the workplace.

Why don’t these workers just pack healthy meals, you might ask? Well, many of us clock long hours and have plenty of responsibilities outside of the workplace, which means that brown-bagging it every day isn’t a realistic choice. According the survey, 79 percent of workers ate food from an on-site cafeteria or vending machine if one was available.

That’s why the type of food available in the workplace makes a serious difference. Most of the workers (68 percent) indicated that they’d like help from their employers to make more wholesome meal choices.

Bread-Baking Vending Machine Makes Its Debut at CES

Fresh BreadFrom traditional beverages and healthy snacks to high-tech gadgets like headphones and Bluetooth speakers, you can find just about anything in vending machines these days. In Washington state, one company is even taking things a step further by creating the BreadBot—a vending machine capable of baking loaves of bread automatically with almost no help from humans.

The BreadBot, which was first unveiled at the Consumer Electronics Show in Las Vegas in January, was designed and built by a company called Wilkinson Baking. It’s a vending machine that can mix, knead and bake up to 235 loaves of bread per day. According to the makers of BreadBot, it’s capable of baking regular white and whole-wheat bread, but it can also pump out nine-grain bread, rye bread, honey-oat bread and more.

The machine is outfitted with 70 sensors that monitor the baking process to ensure each and every loaf is baked to perfection.

The BreadBot does need a little bit of assistance from humans before it can start baking. At least one person is required to add a dry mix to the machine, slice the loaves once they’re done baking and clean the machine at the end of the day. But in a grocery store setting, these bread-baking vending machines could make bakery departments far more efficient. Wilkinson Baking claims there are already several stores interested in leasing the machines so that they can test them out and enjoy the considerable benefits of BreadBot.

A NYC Butcher Shop Is Selling Meat in Vending Machines

Ribeye SteakNeed a cut of steak at a moment’s notice? If you happen to be in New York City, you can have 24-hour access to fresh beef, pork, lamb and more thanks to a series of new vending machines at the Applestone Meat Co. butcher shop. The shop’s owner Josh Applestone was reportedly inspired by the automat designs of the 1950s.

“I remembered Horn & Hardart [the ‘50s automated luncheonette, whose last new York outpost closed in 1991],” said Applestone in an interview with Bloomberg. “There were very few people providing nonstop food. I put two and two together.”

Applestone’s meat vending machines look similar to the carousel-style fresh food vending machines you might see in schools and office buildings. Applestone currently has vending machines in two locations on the outskirts of NYC, and he plans to expand his operation to at least three more locations by 2019. He’s also in the process of developing custom-made machines that are expected to be ready by next year. Whereas his current vending machines can hold about 150 items each, his new machines will be able to hold as many as 1,000 items at once.

Ultimately, Applestone would like to bring his vending machines to neighborhoods in other cities across the country as well. He hopes that the 24/7 machines will offer a convenient source of fresh food to people whose hectic lifestyles may keep them from making it to the grocery store after a long day of work. Thus far, his vending machine enterprise has been enormously successful. According to his interview in Bloomberg, Applestone’s vending machines in Stone Ridge, New York currently account for about 70 percent of his total sales.

Natural Biopolymers Could Replace Plastic Packaging in Vending Machines

Plastic Wrapped PeppersIf you’ve purchased fresh food from a vending machine recently, you may have noticed that it came wrapped in transparent plastic packaging. This impermeable packaging is very effective at preventing fresh food from spoiling, but it’s not especially environmentally friendly. That’s why researchers at the Georgia Institute of Technology are exploring innovative ways to develop new food packaging materials made from natural fibers.

Earlier this month, the researchers announced that they have created a promising new material derived from crab shells and tree fibers that could one day serve as a viable replacement for flexible plastic food packaging. The material is made by spraying alternating layers of chitin from crab shells and cellulose fibers from trees to form a flexible, compostable and impermeable film. These two materials, chitin and cellulose, are the world’s most common natural biopolymers.

“The main benchmark that we compare it to is PET, or polyethylene terephthalate, one of the most common petroleum-based materials in the transparent packaging you see in vending machines and soft drink bottles,” says professor J. Carson Meredith of Georgia Tech’s School of Chemical and Biomolecular Engineering. “Our material showed up to a 67 percent reduction in oxygen permeability over some forms of PET, which means it could in theory keep foods fresher longer.”

The research team’s biopolymer-based packaging sounds like a promising proof of concept, but they still have plenty of work to do to develop a cost-effective manufacturing process that can produce the material in large quantities. If they succeed in their efforts to mass produce the eco-friendly packaging, it could significantly reduce the amount of plastic we consume in vending machines and grocery stores each year.
